In simple words, taking or driving your vehicle on a terrain that isnt a proper road is known as off-roading. 
It is a vast subject and is a very difficult thing to learn or venture into. If you are talking about your vista, please take this positively,but: Forget it!. Classic off-roaders in our country are the Jeeps and to some extent the Gypsies. They have stood over the past years as a very practical vehicle for off-roading purposes. Most of SUVs can be used for off roading, but some have their own limitations and/or advantages.
If you are interested, there are many local clubs and organisations who organise off-road sessions in your city. Try to search for them, if not you driving a car, you can join them and be a part of the fun and adventure that exists in off-road trips.
